Just in time for those “Foch Enthusiasts” looking to treat themselves to a glass over the holidays. Our winemaker Lindsay Puddicombe recommends six more months cellaring to allow the wine time to develop more character; however there is some really nice fruit, spice and tannins already showing.

The 2011 vintage is our first release of this classic cool climate varietal wine, a lighter fruitier style red wine with good vibrant acidity, a fun quaffer to go well with pasta, pizza, ribs or burgers. A little more time and this wine will show really well in the coming months.

Last summer we had the pleasure of welcoming the TV show producers of Bouffe et Cavale in Quebec to come to the winery to film one of their Ontario travel series, this time it was cooking with Georgian Hills wines. The outcome was amazing Chef Vincent Chatigny created a lobster dish which included our GHV Perry in the sauce. The lobster was simply delicious! See below for the recipe and photo.
